BANANA BREAD


i like stanley to have a treat now and then, i think he has inherited his mother and father's sweet tooth so he really does enjoy tucking into all things cake related. however recently i've been making banana bread quite alot as it seems to satify him and contains no sugar...only natural sugars from the banana and agave syrup.
my recipe is pretty foolproof. it doesn't seem to rise as well with the syrup as a replacement for sugar but takes nothing away from the taste. i shall be experimenting a bit over the next few weeks with it though so if i hit upon a better recipe i'll share it with you. but if you have a good toddler cake recipe to share then please leave a link below in the comments....it's always handy to hear from others!







ingredients:
6oz self raising flour

half tsp salt
1tsp mixed spice or cinnamon
a handful of raisins
a few drops vanilla bean extract
1 large egg
3oz agave syrup (or 4oz caster sugar if you'd rather)
1oz melted butter
2 very ripe bananas


method:
sift flour, spice and salt into a bowl.
add raisins.
add beaten egg and syrup and combine.
mash bananas, add vanilla extract and mix in with the melted butter.
make sure it is all mixed well,
then bake at 180°C for 45 minutes, or according to your oven.
it is doen when an inserted skewer comes out clean.

i like mine with butter on, but stanley is happy with his plain!






































if i was going to make a vegan one though i think i'd use this recipe from this beautiful food blog here.
